creamy keto crab dip

Those of you following along in your songbook know that I've recently adapted a 'mostly' keto diet as part of my 19 for 2019 to get my blood sugars back to reasonable levels.

My body is on the mend after a few health set-backs (some of which were self-inflicted) and I'm focusing on whole, REAL foods, but I'm not making myself neurotic with getting things to fit "into my macros."

I do well with dairy, so I include it occasionally with my protein, veggies and FAT!

I brought this scrumptios dip to a Super Bowl LIII (AKA the most BORING Super Bowl evah!) party. And it was a pretty good hit amongst keto and non-keto people alike (no one even knew!) People were talking about how it would be good as a sandwich (obvs not the Keto people. HAHA!)

As you can see from the picture, I kept the carbs low by serving this awesome dip with veggies instead of chips - a different take on a crudités platter. So proud of myself!

creamy keto crab dip (isn't that fun to say?)

  • 3-5 scallions, sliced

  • 1 red bell pepper, seeded and chopped

  • fat of choice (for sautéing)

  • 2 cloves garlic, minced or pressed

  • 1 8-oz pkg cream cheese, cut into 1" chunks

  • 1 lb canned crab*, drained well & picked over for shells (~3 cans - don't bother with the expensive lump crab, you'll be stirring this a bit and it'll all get broken up anyway)

  • 1/4 cup full fat sour cream

  • 1-2 T seasoned salt, to taste (I like Trader Joe's brand best but, Old Bay* might be good here, too?)

  • 1/2 t cayenne pepper (optional)

  • 2 t hot sauce (optional)

  • 1-2 T brine from pickled peperoncini*, to taste (or lemon juice if you don't have that lying around)

  1. Heat a medium skillet over medium heat. Add several tablespoons of your fat of choice. Once hot, add your onions and red pepper and sauté until soft, 5-8 minutes.

  2. Add garlic and sauté until fragrant, 1-2 min. Be careful not to burn it.

  3. Add the cream cheese and stir until melted

  4. Add the drained crab, sour cream and remaining ingredients. Stir well to combine.

  5. When everything is heated thru, serve with veggies (or crackers).
