You know how some days, it’s just REALLY hard to get your -ish together and get dinner on the table? Yeah... us, too.
We live in a town that has 3 delivery options: Pizza, Chinese and Wings (from the pizza place). I can do the occasional gluten-free pizza, Chinese is REALLY hard to do gf, and there are only so many wings even I can eat. So when I don't plan, and we're sick of the rotation... we improvise. Sometimes, we even get a winner out of it.
This was so good, the boy even asked excitedly, "Where'd you get this recipe?" AHEM??? Don't worry, I decided to keep him around even after that.
1 lb ground beef
2 t onion powder
1 t garlic powder
1 1/4 t salt, divided
1/2 t red pepper flakes
1 t dried basil
1/4 olive oil
1 drop Basil Vitality (or 1 T dried basil, crushed before using)
1 drop Black Pepper Vitality (or several grinds from your pepper grinder)
6-8 slices Buffalo Mozzarella
Fresh Basil slices, optional
Preheat oven to 375.
Mix first 6 ingredients together. Form into 3-4 patties, I did oval ones for something different.
Mix olive oil and Vitality oils and brush 1/2 over patties
Top with slices of Mozzarella
Bake for 5 minutes, then brush with remaining oil mixture
Bake additional 5-7 minutes to preferred doneness.
Top with fresh basil and enjoy.
Serve with a side salad and you've got a quick, easy dinner in no time.
