happy st. valentine's day - enjoy it with chocolate dipped fruit



Received these beautiful flowers from my mom. And made these delicious desserts for the boy...


Making your own chocolate covered strawberries is very easy, and WAY cheaper than buying them. Miss Sandra had given us a pineapple (I think she was rubbing in her upcoming trip to Hawai'i), so I threw that in the mix, too.

Wash your stawberries and allow them to completely dry. I like to leave the green tops on for presentation.

Over a pot of simmering water, place a tempered glass bowl and add:

1 cup chocolate chips

2 T coconut oil

2 T butter

1-2 T coconut milk, depending on consistancy

While the chocolate melts, line a sheet tray with a Silpat or parchment

Once the chocolate is melted and everything is mixed in, allow to cool slightly and dip away. Place the dipped fruit on the prepared sheet pan. Place in the freezer for 15-30 minutes so the chocolate can harden. Remove from tray and place on serving plate.

I recommend you eat your dipped fruit within a day or two as it will start weeping under the chocolate.
