My office ordered in lunch from Sweet Tomatoes and I fell in love with Joan's Broccoli Madness .... so I made a healthier version of their salad and the whole family loves it. Who wouldn't love sweet raisins, crunchy broccoli and cashews, crispy, salty bacon, all covered in a delicious homemade mayo dressing?
I started with dehydrating my own raisins. I had used full grapes before and they took about 3 days to shrivel up appropriately. This time I cut them in half first to save time. It only took a day, but they lost a lot of that chewiness that I love in my dried fruit. Either way, the taste is amazing!
Broccoli Salad
2 heads of broccoli, chopped - use the stalks, too, but peel them and chop them pretty small
1/2 c. of cashews, chopped
1/2 red onion, diced
1/2 c. of raisins
4 strips of bacon (or 5, or 6, or...), cooked and crumbled
Sauce
1 c. homemade mayo - recipe below
1/4 c. sugar, organic
2 T. apple cider vinegar
Mix together in a big bowl, and cover with the sauce. Delish!
Homemade Mayo
1 egg
1/4 c. light tasting oil (try avocado or walnut), plus more for pouring
1 T. dijon mustard
1 T. lemon juice
dash of salt
Use a stick blender to combine and then add a stream of oil until you get your desired consistency. To change things up, try adding some other spices, like garlic or cayenne, for a new take.
